An Ode to My Favorite CSA Veggie

Cooking / Eating In

Ok, so it’s not an ode – more like a statement of fact.  One of my very very favorite veggies from the CSA thus far has been squash (I’m counting zucchini in this category).  The variety of shapes, colors, patterns and flavors is so much fun – I mean, just look at those beauties!  I had so much squash I didn’t know what to do at first, but I got over that soon enough.  Stay tuned for some squash recipes in the upcoming posts – yum!

What’s your favorite vegetable?

I’m currently having a love affair with brussel sprouts. It just seems so wrong to love them which is why it makes it even more fun.

Mmm. I’ve only ever made them 1 way, and I like them, but I’d love to try other preparations!

That’s like asking to choose your favorite child…it’s impossible for me! 😛
Well, I can say in the winter, I like root vegetables such as Japanese sweet potatoes, but in the summer, I like to purchase kale at the green market, but I guess my all-time favorite is Chinese gai lan.

Thanks! I’m trying. Although I admit I haven’t tried making eggplant again after the bitter babaganoush. =oT

squash is yummy all the time! My favorite farmer’s market veggie is definitely asparagus! I love when it’s in season and there are just piles and piles and piles of it at every stand!

I wish we had piles and piles of it! Right now the asparagus is rubber-banded into measly, overpriced bunches at my local grocery store!

Squash is one of my fave versatile veggies! I made “noodles” with it last night & have been grating and slicing it all afternoon to freeze for later! Can’t wait to see what you do with it!

Too many!!! Carrots, corn, tomatoes, I love them all. I would have to say pumpkin and acorn squash are my all-time favorites, though. They are classic fall veggies that I love to cook with and display around my apartment 🙂

we’re thinking about doing a csa next year and would love to hear more about what you do with the squash, since i hear that makes up a big portion of the boxes at a certain point in the season. beautiful veggies you’ve got there!
