Fun Fact Friday

Happy Friday, everyone!  Well, we are well into September, and fall is upon us.  What fun fall activities do you have planned? In my neck of the woods, this season feels like leaves crunching underfoot, chunky sweaters, the tension of an apple just as it’s plucked from its tree, and warm cider.  YUM!

I especially appreciate today’s Fun Fact!

One of my favorite veggie discoveries – the kohlrabi!

This week is Vegetarian Awareness Week.

While I’m definitely not a vegetarian (hellooooo, Pig Island), my Veggie Resolution, where I prepared vegetables in 20 different ways, definitely enhanced my appreciation for vegetables.  Why, they could be downright delicious! Crazy, isn’t it?

What’s your favorite vegetable and why?

Haha, I am 90% vegetarian, but I slipped up last weekend sampling my brother’s grilled chicken and tri-tip while we were in Lake Tahoe. My favorite vegetable is carrots – I love that they are sweet and crunchy, and can be dipped in delicious hummus 🙂

Impossible to choose! If I HAD to, probably any kind of greens…turnip, dandelion, collard.

OMG, I love love love veggies! I’d have to say mine might be cucumbers. Especially a cucumber salad with soy sauce, garlic, vinegar and red pepper flakes. I also love any leafy greens with garlic. OHhhhhhh man. 🙂

I think I would have to go with carrots too. I love that they are portable, taste great raw or cooked, and are a good source of fiber. And yes, they pair wonderfully with hummus! Yum!!
